Instructions

  • 1.   Peel the celery root. Cut it into large cubes. Put it in a saucepan and cover with water.
  • 2.   When the pieces are tender, blend or pass through a fine sieve with salt, pepper, and nutmeg. Add the butter to the obtained puree.

Notes & Suggestions

  • Be careful, when the celery root is cut, it needs to be cooked quickly as it tends to oxidize, meaning it turns brown when exposed to air (like apples).
