Stuffed Peppers

Instructions

  • 1.   Wash the peppers and cut them lengthwise. Remove the seeds, then rinse them thoroughly.
  • 2.   Peel and chop the shallot and garlic cloves. Wash the zucchini thoroughly and grate them.
  • 3.   Sauté the shallot and garlic in a sauté pan with 1 tbsp of olive oil, add the zucchini and cook for 10 minutes. Preheat the oven to 350°F (180°C).
  • 4.   Prepare the stuffing by mixing the cottage cheese, zucchini, breadcrumbs, eggs, fresh parsley, and oregano. Season with salt and pepper.
  • 5.   Fill the peppers with this stuffing. Place them in an ovenproof dish, drizzle with a little olive oil. Bake for 45 minutes. Add a little water to the bottom of the dish if necessary.

  • 2 tablespoon of olive oil
