Instructions

  • 1.   Preheat your oven to 350°F (180°C).
  • 2.   Cut the eggplants in half lengthwise, score the flesh with a knife to make shallow cuts.
  • 3.   Finely chop the parsley.
  • 4.   Peel and finely chop the garlic.
  • 5.   Brush with olive oil, add salt and pepper to taste, sprinkle with the parsley.
  • 6.   Bake for about 30 minutes.
  • 7.   The eggplants should be soft and ready to be eaten with a small spoon when taken out of the oven.
