Eggplant, Mozzarella, and Tomato Tart

Instructions

  • 1.   Preheat the oven to 180°C (350°F).
  • 2.   Slice the tomatoes, eggplant, and mozzarella into rounds.
  • 3.   Chop the basil.
  • 4.   Roll out your pie crust and sprinkle grated Parmesan or Gruyère cheese on the bottom.
  • 5.   Add the eggplant, tomato, and mozzarella slices, as well as the chopped basil leaves.
  • 6.   Sprinkle with sugar.
  • 7.   Drizzle with a little coconut oil.
  • 8.   Bake for 25 minutes at 180°C (350°F).

  • 50 g of grated parmesan
  • 3 tomatoes
  • 1 mozzarella
  • 1 eggplant
  • 2 pinch of sugar
  • 1 tablespoon of coconut oil
  • 5 leaf of fresh basil

    I made some modifications and it was very good! I replaced the fresh basil with dried basil and the coconut oil with olive oil because that's what I had at home, and it turned out just as good. I'm deducting one star because I disagree with the cooking time, it should be around 35-40 minutes at 180°C. Next time, I might pre-bake the crust, we'll see how it turns out.
