Instructions

  • 1.   Peel the leeks, rinse them thoroughly, and cut them into julienne strips. Peel the carrots and potato, rinse them, and cut them into pieces. Peel the garlic.
  • 2.   Heat the oil in a pot, then sweat the leeks. Add the garlic, carrot and potato pieces, season with salt and pepper, and cover with water.
  • 3.   Bring to a boil, then reduce the heat and let it cook for 20 to 25 minutes. Blend everything, sprinkle with chopped parsley, and serve.
