Milanese-style escalopes

Instructions

  • 1.   Crack the eggs into a bowl and beat them to make an omelette, season with salt and pepper. Pour them into a shallow plate. Mix the parmesan cheese and breadcrumbs in a second plate.
  • 2.   Heat the oil in a frying pan over medium heat. Season the escalopes with salt and pepper, then dip them successively in the eggs and the parmesan mixture to coat them with a thin layer. Place them in the hot oil and cook for 3 minutes on each side (if the escalopes are very thin, otherwise a little longer).

Notes & Suggestions

  • Serve with tomato sauce and spaghetti.
