Instructions

  • 1.   Cut the cucumber into pieces. Cut the tomatoes in half. Pick the mint leaves. Set aside a few tomatoes and mint leaves.
  • 2.   Blend all the ingredients in a blender. Season with salt and pepper.
  • 3.   Serve in plates, garnish with the remaining tomatoes and mint, and drizzle with a dash of olive oil. Enjoy!
