Beef bourguignon with Companion

Instructions

  • 1.   The day before, cut the beef into large cubes, put it in a bowl and add the red wine. Cover and refrigerate overnight.
  • 2.   On the day, peel the onion and cut into quarters.
    Peel the carrots and cut into pieces.
    Peel the garlic.
  • 3.   In the robot's bowl equipped with the chopper, put the onion. Mix at Speed 11 for 10 seconds.
  • 4.   Replace the chopper with the mixer. Add the carrots, garlic, and oil. Start the Stew Program P1 for 8 minutes.
  • 5.   Meanwhile, coat the beef with flour. When the program is finished, add the beef with the red wine, veal stock, water, and bouquet garni. Start the Stew Program P2 at 100 °C for 2 hours.
  • 6.   Serve hot with steamed potatoes or tagliatelle.

Notes & Suggestions

  • This recipe requires marinating the meat the day before.

  • 25 g of flour
  • 40 cl of veal stock
