Chocolate mousse (egg-free)

For the chickpea juice, it refers to the juice obtained when draining the can. If you cook your own chickpeas, it refers to the cooking liquid.

Instructions

  • 1.   Choose your favorite chocolate and melt it in a double boiler.
  • 2.   Meanwhile, beat the juice until stiff peaks form (just like you would with egg whites).
    As with any chocolate mousse, at this stage you can add vanilla, sugar, etc... to taste. To do this, incorporate the flavoring or powdered sugar into the juice while beating.
  • 3.   Gently mix the two preparations together and let it set in the refrigerator for at least 2 hours.

  • 150 g of 70% dark chocolate
