1. Preheat the oven to 350°F.
2. Place the pie crust in a greased pie dish and prick it with a fork.
3. Cover it with pieces of goat cheese (about 2/3 of the cheese) and sprinkle with thyme.
4. In a mixing bowl, prepare the custard.
5. Beat the eggs in a bowl.
6. Incorporate the heavy cream and then the well-drained spinach.
7. Season lightly with salt (because of the cheese) and generously with pepper.
8. Spread the mixture over the pie crust and bake for about thirty minutes.
