Dhal (India) green lentils

Instructions

. Sauté the onions in a little oil. When they are translucent, add a tablespoon of curry.

. Stir and cook for 1 minute.

. Add the lentils, potatoes, and carrots.

. Cover generously with water and cook for about 40 minutes over medium heat, then low heat to allow the water to evaporate, stirring occasionally.

. Season with salt at the end of cooking.
