Orange and Mint Salad

Instructions

  • 1.   Finely chop the mint leaves.
  • 2.   Soak the raisins in a small bowl of warm water. Set aside.
  • 3.   Take one-third of the oranges, squeeze them and put the juice in a saucepan. Heat for 2-3 minutes over medium heat. Remove the saucepan from the heat and infuse the chopped mint leaves for 10 minutes, then strain the juice.
  • 4.   Peel the remaining oranges using a sharp knife, remove the white membrane, and cut the oranges into slices about 7-8 mm thick. Arrange the orange slices in a serving dish. Pour the mint orange juice over the slices, distribute the almonds and drained raisins on top. Sprinkle with cinnamon and refrigerate for at least 1 hour.
  • 5.   Decorate with mint leaves before serving.
