Grilled Chorizo Omelette with Spinach Sprouts

Instructions

  • 1.   Heat a pan and sear the chorizo slices. They should brown and reduce slightly. Set aside.
  • 2.   Place the spinach in the pan and wait for it to reduce.
  • 3.   Meanwhile, beat the eggs in a bowl with salt, pepper, and paprika until you have a smooth and slightly frothy mixture.
  • 4.   Once the spinach has reduced, cut the chorizo into small pieces and add it to the pan. Mix together. Add the eggs and cook for 2 minutes over medium heat.
  • 5.   The cooking time will depend on whether you like your omelette runny or not.

Notes & Suggestions

  • I would recommend a runny omelette to avoid a "spongy" texture, but it's up to you. Cook for 3 minutes for a runny omelette and 5 minutes for a "dry" omelette...
