Omelette of chard

To be prepared at the beginning of summer, during the "young" season, without ribs, it is eaten hot, cold, in main course, in accompaniment, in cubes with aperitif or in picnic.

Instructions

  • 1.   Remove the ribs and wash the chards with large amounts of water. Squeeze and coarsely chop with a knife.
  • 2.   Heat 3 tablespoons over medium heat in a frying pan
  • 3.   Put the chards in the pan and cover. Cook for 10-12 minutes over medium heat, stirring occasionally.
  • 4.   Beat 4 eggs, a clove of minced garlic, salt and pepper.
  • 5.   Add the beaten eggs to the chard, taking care to empty the pan of the water returned by the chard.
  • 6.   Cook for 5-6 minutes.

Notes

  • My habit is to fold mine like a slab to form a thick rectangle, easier to cut into cubes.
