1. Grate the zucchini, then wrap them in a towel and squeeze out as much liquid as possible. Sauté them in a pan with olive oil until they have released all their water. Season with salt and pepper.
2. Separate the egg whites from the yolks. Put the yolks in a bowl with the flour, baking powder, and cream. Beat the egg whites until stiff peaks form. Mix everything together and add the grated zucchini.
3. Pour the mixture into the pan and cook until done. Let it cool, then spread with garlic and herb cheese and place the slices of smoked salmon on top. Roll it up and serve with green salad.
