Instructions

  • 1.   In a bowl, prepare the vinaigrette by mixing 2 tbsp of olive oil, vinegar, salt, and pepper.
  • 2.   Cut the tomatoes in half, dice the feta cheese. Put them in a salad bowl.
  • 3.   In a pot of boiling water, cook the pasta according to the time indicated on the packaging. Drain them and then rinse them under cold water.
  • 4.   In a sauté pan, sauté the chicken breasts cut into strips in the remaining olive oil. Season with salt and pepper, let them brown for 8 minutes.
  • 5.   Place the cooled pasta in the salad bowl, add the cooked chicken. Pour the vinaigrette over everything and toss the salad. Serve chilled, sprinkled with toasted pine nuts.

  • 2 tablespoon of pine nut
