Zucchini and Feta Gazpacho

Instructions

  • 1.   In a pan, sauté the minced onion with a little oil.
  • 2.   Add the peeled and sliced zucchini, a glass of water, a bouillon cube, and let simmer over low heat for 20 minutes.
  • 3.   Transfer everything to a blender, along with the diced feta, lemon juice, parmesan cheese, and basil, then blend until you obtain a smooth mixture.
  • 4.   Place in the refrigerator until it is well chilled.
